These are the lettuce cups I made last night, except I modified the recipe a little bit. Here’s what I did:

1 lb. ground turkey (I think mine was 93% fat free?)

1 tbsp coconut oil

2 cloves garlic, minced

1/8 tsp. ground ginger

1 cup chopped mushrooms

2/3 cup thinly sliced green onions

12 Boston lettuce leaves (I think mine were red romaine, but do what you feel)

~3 tbsp Tamari (I used low sodium) (also this apparently isn’t strict paleo, but it’s gluten-free and it tastes exactly like soy sauce)

~1.5 tbsp white wine vinegar (looool, because rice vinegar isn’t paleo)

~3 tsp. Sambal Oelek

Heat the oil in a nonstick skillet over medium-high heat. Then add the turkey, garlic, and ginger and cook until the turkey is done, 7 ish minutes. Then add the mushrooms, and cook until they’re done, 3 ish minutes more. I like my meat really done, but do what you feel. Remove from heat and add the green onions. Stir it all together. Then in a little bowl, put the tamari, vinegar, and Sambal Oelek and then stir them all together. Pour that over the turkey and mushroom mixture and stir it all together. Then put ~1/3 cup of the turkey mix in each lettuce leaf.

The mushrooms are un-taste-able and are therefore a secret vegetable in a super yummy meal. Apparently they’re high in vitamin D too which is good. And between the green onions and lettuce, there’s even MORE vegetables.

These taste fucking GREAT and I highly recommend you go make some.
